Blackened Salmon Sandwich

I’ve been workout a lot lately so I increase my protein intake. This blackened salmon sandwich is a great way to meet my goal of increasing my protein.

The sandwich is great if keep the fillets thin ~ a thicker fillet over powers the other ingredients. Also, grill each side to have a nice crust on it.

Ingredients
4 (4 ounce) fillets salmon
2 teaspoons blackening or Cajun seasoning (see Ingredient note)
1 small avocado, pitted
2 tablespoons reduced-fat mayonnaise
4 crusty whole-wheat rolls, split and toasted
1 cup arugula
2 plum tomatoes, thinly sliced
1/2 cup thinly sliced red onion

Oil grill rack, preheat grill to high. Rub blackening (or Cajun) seasoning on both sides of salmon. Grill until cooked through, about 3 to 4 minutes per side. Mash together avocado and mayonnaise in a small bowl. To assemble sandwiches, spread the avocado mixture on the bottom half of each roll. Top with the salmon, arugula, tomato and onion.

Spring Greens with Parmesan Crisps

We are still overrun with lettuce from our garden. Here’s another salad recipe that we discover to use some of the lettuce.

Ingredients

1/2 cup shredded Parmesan
2 1/2 Tbsp lemon juice
2 tsp Dijon mustard
1/4 tsp freshly ground pepper
1/4 cup olive oil
2 heads Boston lettuce, torn into bite-size pieces (6 to 8 cups)
2 cups torn curly endive
2 Tbsp each snipped chives and dill

1. Heat oven to 375ºF. You'll need a baking sheet lined with nonstick foil. Spoon Parmesan into eight 3-in. rounds, 1 Tbsp each, 1 in. apart on foil. Bake 6 to 7 minutes until golden. To curl, remove crisps from foil with tongs while hot. Drape over a rolling pin until cool enough to retain curve.

2. Whisk lemon juice, mustard and pepper in small bowl; slowly whisk in oil until blended.

3. Toss lettuce and curly endive with herbs and dressing. Serve with crisps

Opportunity House Child Sponsorship: Community Involvement

Here's an interview that I did with Pearl S. Buck about our karate schools sponsorship of John Panta from the Philippines. It's a great cause. For more information, go to the website at http://www.psbi.org.

Lessons learned from our dojo's sponsorship
* Work together for the great good - Our sponsorship required us to plan, raise funds, and coordinate activities to work towards sponsoring John.
* Strength in numbers - We found that it's easier to make a huge difference as part of a team instead of individually.
* Practiced Leadership - We talk about leadership skills constantly in class but this puts those leadership skills to the test
* Be on a Heroic Mission - I think we should always strive to be on a heroic mission in life. Nothing can drive your passion more than becoming a hero in life.

Origami Peace Crane


The peace crane is one of the most recognized and popular origami pieces. In Japan, the crane represents peace and health. They believe that folding 1000 peace cranes will give you good fortune.

Avocado Caesar Salad Dressing

Our square foot garden is doing excellent this year. Currently, we are overrun with lettuce. I needed some ideas for salad recipes to use all this lettuce. I did a call out for salad recipes on my facebook account and got some great ideas.

A friend from High School, Jen Smith, gave me this recipe. It turned out awesome.

Ingredients
1 small avocado, pitted
Juice of 2 lemons
2 teaspoons anchovy paste
2 cloves garlic, finely chopped or grated
1 teaspoon Worcestershire sauce
1/4 cup grated Pecorino Romano cheese
Salt and ground black pepper
1/4 cup Extra Virgin Olive Oil, divided
2 large romaine hearts, split in half through the core
Nonstick cooking spray

In the bowl of a food processor, combine the avocado, lemon juice, anchovy paste, garlic, Worcestershire, cheese, salt and lots of pepper. Pulse the machine to chop everything up then leave it on and stream about 1/4 cup Olive Oil into the mixture until a thick dressing forms. Pour dressing over your favorite lettuce.

Corn and Chickpea Salad

This salad turned out great. The grilled favor of the corn balances well with the chickpeas and the feta cheese.

We found this recipe in Country Living magazine.

Ingredients
5 ears corn
1 cup cucumber diced seedless
1 cup chickpeas, drained and rinsed
1 cup walnuts, chopped
¼ cup lemon juice
¼ cup fresh oregano
3 tbsp olive oil
1 clove Garlic, minced
1 cup feta, crumbled
Salt and pepper

Rub 5 ears of corn with olive oil, season with salt and pepper. Grill over high heat until lightly brown. Once corn cools slightly, slice corn kernels from cobs and toss with rest of ingredients. Serve immediately.
