My Simple Kale Chip Recipe

My daughter gave me some extra kale so I decided to make it into kale chips using my dehydrator.

2 Bunches Kale
3 tbsp Olive Oil
1 tbsp Apple Cider Vinegar
1 tsp Sea Salt

First, destem the kale leaves and cut or tear them into bite size chips. Put kale piece into a large mixing bowl. Add Olive Oil, Apple Cider Vinegar, and Salt. Mix until the kale chips are well coated. Lay the kale chips in dehydrator in one layer. Set the dehydrator to 135° F. Let dehydrate until the kale is completely dry and crisp.

Collecting and Preparing Hickory Nuts

It's time to collect some hickory nuts. Collecting hickory nuts is as simple as finding a tree and picking them up off the ground.

The hickory tree has compound leaves. The tree in the video is a Shagbark Hickory because it's compound with five leaves. The Shellbark Hickory has 7 compound leaves.

The hickory nut is very easy to identify because the husk has four sections to it. The husk needs to be removed.

To prepare them, you start with a visual inspection. Look for holes and cracks and check the weight. These are indicators that an insect has bored into the nut.

After separating out the bad ones, I lay them out on a drying rack and let them cure for 2 weeks.

Wild Grape Harvest

I am out harvesting the wild grapes that I found the other week. These are definitely a cultivated variety because of the size. I am collecting some to make grape fruit leather with.
