Here's the healthy alternative for a family favorite - fried chicken tenders. This version is baked to make it low fat and the oatmeal is the base for the crispy coat to keeps it whole grain.

It's a great alternative for dieters because of the low carbohydrate content and high in lean protein.

Amount per Serving
Protein -- 40g
Carbohydrates -- 14g
Fat -- 7g

Ingredients
1 lb Chicken Breast
1 cup Oatmeal
1/4 tsp Chili Powder
1/4 tsp Smoked Paprika
Salt and Pepper to taste
1/4 cup Egg Beaters

Blend Oatmeal until it has the consistency of flour. In a bowl, mix chopped Oatmeal, chili powder, smoked paprika, salt, and pepper. In other bowl, add 1/4 cup egg beaters. Oil baked dish by spraying it with Pam. Create an assembly line and dip the chicken in the egg beaters. Then coat with the oatmeal mixture. Finally, place in the baked pan. Bake in oven at 400 degrees for 20 to 25 minutes
