Rustic White Bean Soup with Grilled Tomatoes and Onions

This White Bean Soup is a favor of ours. The grilling of the tomatoes and onions give it the rustic mild grilled flavor. 

Ingredients
 
1 Large Yellow Onion, cut into 1/2 inch slices 
8 Plum Tomatoes 
2 Tbsp Extra Virgin Olive Oil plus more for brushing 
1 Clove Garlic 
2 Cans (15 oz each) Cannellini Beans  
1/2 Cup Basil 
Kosher Salt 
Ground Black Pepper 
2 Tsp Balsamic Vinegar 

Brush Onion and Tomatoes with Olive Oil. Grill Onions for 10 - 12 minutes over direct high heat flipping halfway through the time until lightly charred on both sides. Grill tomatoes over direct high heat for 3 - 5 minutes turning occasionally until lightly charred on all sides. 
 
Peel the skins of the tomatoes and roughly chop the tomatoes and onions. In a sauce pan over medium-high heat, warm 2 tablespoons of olive oil. Add garlic and onions and cook for 2 minutes, stirring occasionally. Add Grilled Tomatoes, cannillini beans with liquid, and basil. Lightly season with salt and pepper. Bring to boil then simmer for 10 minutes, stirring occasionally. Season again with salt and pepper to taste. Add Balsamic Vinegar and finish with a final stir, and serve.
