Grilled Corn,Tomato, Basil, and Feta Salad
Tomatoes - Check - in the garden.
Basil - Check - in the garden.
Corn - Check - in the garden or cheap at the store.
This salad is perfect for the summer time because most of the ingredients are on your summertime check list, discounted at the supermarket, or in your garden.The smoked favor of the corn, infused with the tangiest of the red vinegar, combined with the freshest of the tomatoes, and a hint of basil makes this salad a real winner.
6 ears grilled corn
1/8 cup olive oil
2 tbsp. red wine vinegar
3 medium tomatoes, diced
1/2 cup feta cheese
3 tbsp. fresh basil, chopped
salt and pepper to taste
Coat corn with olive oil and grill until some kernels become brown. Once done, remove from grill and cut kernels off of cob. Whisk olive oil and red wine vinegar in a medium sized bowl. Add the remaining ingredients and toss well. Season with salt and pepper. Cover and refrigerate until ready to serve.
