After Thanksgivings Leftover Healthy Turkey Soup

Are you wondering what to do with that leftover Turkey? We don't let anything go to waste in our house so we use the bones and leftover turkey to make this delicious soup.

1 leftover turkey
6 cups of water
1 medium onion
2 tsp salt
1/2 tsp black pepper
1 bay leaf
1 1/2 cups chopped carrots (3 medium)
1 1/2 cups chopped celery (3 stalks)
2 tbsp fresh herbs of choice
1 cup Cooked Rice or Noodles (optional)

In a large kettle combine leftover turkey, water, onion, salt, pepper, and bay leaf. Bring to a boil, reduce heat. Simmer, covered about 1 hours.

Remove turkey from broth and let cool. Skim fat from broth. Remove meat from bones. Discard bones and bay leaf.

Bring broth to a boil. Stir in carrots, and celery. Simmer, covered, about 8 minutes. Stir in Turkey and herbs. Heat through. Optional: Add cooked rice or Noodles before serving.
