Black Bean, Cucumber, and Corn Salad

My wife, Ester, made this summer salad for their company picnic lunch. She used me as the taster because she made additional to another recipe. It turned out terrific so I wanted to share with you.

2 cups canned black beans, drained and rinsed
2 cups frozen corn
1 cucumber, peeled and chopped into quarters
1/3 cup chopped red onions
1/4 cup chopped fresh cilantro
2 tbsp lime juice
1 tsp olive oil
1/2 tsp salt
1/2 tsp ground cumin
1/8 tsp ground red pepper

Mix all ingredients and chill overnight.
