Irish Sausage, Cabbage, and Potatoes in a Cast Iron Pan



Ingredients
2 lbs. Sausage
2 tbsp. Olive Oil
1/2 Onion or 3 Shallots, chopped
1 Green Cabbage, Cut into slices
6 Potatoes. Quartered
1/2 cup Water
Salt

Over Medium High Heat, Add Olive Oil and Sausage. Cook Sausage in Cast Iron Pan until done. Remove from pan and set aside.

Add Shallots to pan cook for one minute. Add potatoes to pan and continue to cook for 3 to 4 minutes. Lay Cabbage on top of potatoes in pan, salt, and add water.

Cover and cook for 45 minutes until the cabbage in cooked but not mushy and the potatoes are fork tender. In the last 5 minute add the sausage back into pan to heat up.
