This is my first attempt at making a Texas Pete Clone Hot Sauce. The favor is excellent but the hot sauce is a little thin and watery.
Next time, I am going to adjust the recipe by either simmer it uncovered before putting it in the blender or simmering it for some more time after blending it.
Ingredients
4 cups of White Vinegar
40 Cayenne Peppers
20 Cloves Garlic
2 tbsp. Lime Juice
2 Bay Leaves
2 tsp. Salt
2 tsp.
Paprika Bring all ingredients to a boil in a not reactive Stainless Steel pot.
Once mixture is boiling reduce temperature and simmer covered for 20 to 30 minutes.
Cool mixture and blend until smooth. Pour through sieve and into jars.
