It's arrived - Gracie Combatives

It's arrived. I recieved my Gracie Combatives program in the mail. I wanted to train for my blue belt in Brazilian Jiu Jitsu and you know me, I always go for the best.

Gracie Jiu Jitsu is obviously the best. The other reason that I chose the Gracie Combatives program is that I am not interest in sports Jiu Jitsu. I wanted to learn in for self defense so it was important for me to pick a program that addresses someone kicking and punching at you.

I already checked out the online tool at Gracie University and it looks very cool. Over the next few monthes, I'll give you updates on my training.

Slow Carb Diet Recipe - Chilli Con Carne



Here's a great recipe for anyone on Tim Ferriss' Slow Carb Diet. If you want more information about the Slow Carb Diet, check out his book at http://tinyurl.com/c7w22gq

Ingredients
1 lb Grass Fed Ground Beef
1 Onion, chopped
2 Tomatoes, chopped
1 can (16 oz) Red Kidney Beans, rinsed and drained
1 can (8oz) Tomato Sauce
2 Bay Leafs
1 tsp Chilli Powder
1 tsp Salt
1/2 tsp Pepper
Hot Sauce to taste

Add beef, onion, and pepper to a medium saucepan and cook over medium heat until beef is browned and onions and peppers are sauteed. Add rest of ingredients to saucepan. Cover and simmer for one hour. Remove bay leave. Add hot sauce to taste and serve.

Troubleshooting - The Paper Ninja Star



A few years ago, I filmed and posted a video on how to make a paper ninja star as a tutorial for my own students to use during our summer camp. The video became a tremendous success. In the comments of the video, I realized that many people were having difficulty finishing the star so I decided to create this troubleshooting video to help.

Red Cabbage Salad with Walnuts

We hosted our summer karate picnic this weekend at the Dublin Boro Park. Ester, my wife, always brings out our best summer side dishes and to serve up at our annual picnic.

This recipe is a red cabbage salad that she made this year. This salad is very versatile. You can add pecans instead of the walnuts or you can sweeten it up a little with raisins or fresh chopped dates. We had some parents ask for the recipe so here it is.

Ingredients
1 medium red cabbage, chopped
1 tbsp yellow onion, finely chopped
1 cup walnuts, chopped
3/4 cup olive oil
1/3 apple cider vinegar
1 tsp celery seeds
1/4 tsp dry mustard
2 tbsp sugar
2 cloves minced garlic

Roughly chopped red cabbage in food processor. Add cabbage, onion and walnuts in large salad or mixing bowl. Whisk olive oil, celery seed, vinegar, mustard, sugar and garlic in a separate bowl then pour over cabbage and toss.

Chicken Breast Skewers with Mojo (Cuban Citrus Garlic Sauce)

This is a terrific kabob recipe using a non-ketchup based BBQ sauce called Mojo. You can use sour oranges instead of the lime and OJ mix that I used here. I couldn't find sour oranges at our store.

This recipe bursts with the fresh orange and lime tanginess that gives it that authentic South of the Border favor.

Ingredients
2 lbs Chicken Breast
1/2 cup olive oil
8 large cloves of garlic, cut into paper thin slices
6 fresh squeezed limes
1/2 fresh squeezed orange
1/2 cup water
1 tsp ground cumin
1 tbsp fresh oregano, finely chopped
1 tsp salt
1 tsp fresh ground pepper
3 tbsp chopped cilantro

Heat oil in a deep saucepan over medium heat. Add in the garlic and cook until they are a light golden brown, about 1 to 2 minutes. Stir in the lime juice, orange juice,water, cumin, oregano, salt and pepper. Bring the sauce to a boil then take off burner to let cool. Once the mixture is cool, add the cilantro. Reserve 1/2 of the mojo for brushing and the other 1/2 for serving.

Cut the Chicken Breast into 2 inch cubes and skewer them. Fired up grill to Direct Medium heat. Place chicken on a well oiled grill. Brush Mojo sauce onto the kabobs. Continue to turn and brush the sauce on the kabobs every few minutes until the chicken is cooked thoroughly. Transfer to a serving dish and pour the reserve over the kabob to serve.
